Curd Rice | Thayir Sadam | Perugannam


Curd rice or Yogurt rice - Part of South Indian cuisine, is a true comfort food.  A meal in South India is not considered complete unless and until curd rice/thayir sadam is served.

It is really easy to prepare and does not require many ingredients.  The addition of ginger, curry leaves and coriander leaves add a beautiful flavor to the rice.  It is a complete meal by itself and does not require any special side dish, just any pickle will do.

Ingredients:

  • Raw Rice - 1/2 cup
  • Thick curd - 1 cup
  • Milk - 1/2 cup
  • Butter - 1 tsp (optional)
  • Carrot - 2 tbsp, chopped finely
  • Coriander leaves - 2 tsp, chopped finely
  • Salt - As required

To temper:

  • Mustard seeds - 1 tsp
  • Urad dal - 1 tsp
  • Green chilli - 1
  • Ginger - 1-inch piece
  • Curry leaves - a few

How To Prepare Thayir Sadam:

  • Pressure cook rice for 4 whistles. Add about 1/2 cup more water than you normally add to cook rice.
  • Chop ginger and green chilli finely.
  • While the rice is still hot, mash it well along with warm milk and butter.
  • When it has cooled down a bit, add curd and salt and mix it well to form a creamy mixture.
  • Heat oil in a kadai and add mustard seeds.  When they start to splutter, add urad dal, green chilli and ginger, curry leaves and saute for a few seconds. Add this to the curd rice mixture and mix well.
  • Add carrot and coriander leaves and mix well.  Check for salt and add if required.
  • Yummy curd rice is ready.  Serve with any pickle of your choice.
