Idli Sambar | Tiffin Sambar | Sambar for Idli Dosa


Sambar - one of the best side dishes for idly, dosa or even pongal.  This can be prepared either with or without vegetables.  Even though we prepare different chutneys as sides to idli or dosa, nothing can beat the combo of hot idlis and sambar.  Sambars prepared for idli or dosa should be a bit watery than the normal thick ones we make for rice.

Ingredients:

  • Toor dal - 1/4 cup
  • Onions - 2 finely chopped
  • Tomato - 1, big sized, finely chopped
  • Green chillies - 2, slit lengthwise
  • Tamarind - a small lemon size
  • Turmeric - 1/4 tsp
  • Sambar powder - 1 tsp
  • Vegetables - 1/2 cup (a mix of carrot, beans, drumstick, peas, etc)
  • Salt - As required

For the seasoning:

  • Mustard seeds - 1/2 tsp
  • Asafoetida/Hing - a pinch
  • Curry leaves - a few
  • Oil - 3 tsp

How To Prepare Sambar for Idli or Dosa:

  • Pressure cook toor dal for 3-4 whistles, with 1-1/2 cups of water.  Mash the dal well and keep aside.
  • Soak tamarind in warm water for about 20 mins, extract the juice and set aside.  Boil all the veggies and keep aside (take care to see that they are half boiled).
  • Heat oil in a kadai and add the ingredients for seasoning.  Add onions and fry till translucent.  Add tomatoes, green chillies and fry for 2-3 minutes.
  • Add all the veggies, dal, turmeric powder, sambar powder, salt, 1 cup of water and mix well and let it cook for about 3-4 minutes.  (this sambar should be watery, so adjust the water level accordingly).
  • Now add the tamarind juice and adjust for salt if required and let it cook for another 7-8 minutes.  Switch off the flame.
  • Serve hot with idli, dosa or uthappam.

Notes:

  • Can use small onions instead of the big ones to enhance the flavor of the sambar.
